Empirical in Paname

When we first launched in Paris over two years ago (what seems like an eternity now), the world was at a slightly better place, unaware of what was lying around the corner. Back then we threw an epic party at our friends Public Cambridge House, slinging cocktails and cracking cans open. A few lockdowns later, it felt like a new visit was way overdue. So we packed our suitcase with booze and headed south to the City of Light to catch up with friends.

Empirical x Combat – Soirée Exaltée

Perched on the heights of Belleville is one of our favorite places to hang at when in Paris.

One could almost walk by Combat (remember that pre-bottled collab we did?) without noticing the hustle and bustle happening behind the foggy windows on this cold November night.
Inside, the room is packed (safe distances were kept of course) for a special Empirical menu takeover concocted by Margot and her team.

Think The Plum, I Suppose with plum stones-infused Campari, verjus, fig leaf kombucha and chocolate bitters, or Ayuuk with genepi, vermouth, orange bitters and harissa.

Empirical x Clamato – Brunch Arrosé

Septime has been carrying our spirits since day one. So every time we’re around, we make it a point to pay them a visit. Turns out we had a few unicorns left in our suitcase so we thought: why not throw a boozy brunch at their seafood annex Clamato?

At Clamato, the menu is determined by daily deliveries from St Jean de Luz, Concarneau, or l’Ile d’Yeu. We worked closely with co-founder and sommelier Théo Pourriat to imagine a selection of drinks that would fit its structure.

A riff on their classic Clamato Caesar with the very last bottles of habanero spirit Fuck Trump and His Stupid Fucking Wall to get the day started, before moving on to a stronger Kaneshichi Mizuwari to accompany a dish of cuttle fish and finishing on a spritz-like Strawberry Hop Cake and Tonic to conjure memories of warmer days.

Next time you’re in town, do yourself a favor and head to the Rue de Charonne. Word on the street is these cocktails may not be totally gone…

Empirical x Le Fooding – Vernissage Enivré

Before heading back home, we also stopped by le Supermarché Fooding for the release of their 2022 print guide, singling a few cocktails for the guests attending the opening night.

In between these, in what may have been an attempt to fight the underlying hangovers, we went to share a few drinks with friends. We obviously asked for the recipes to those banging drinks to share with you. From them, to you.

Here are two recipes created by our friends at Little Red Door and Pantobaguette.

Ayuuk Never Ending Glory


  • 200ml Ayuuk
  • 200ml Sake
  • 50ml Peach Liqueur
  • 50ml Water
  • Your favorite herb for garnish


  • Add all ingredients into a jar.
  • Leave it in the freezer overnight.
  • Pour into a coupe.
  • Garnish with your favorite herb.
  • Enjoy!

Ayuuk Sour


  • 4cl Ayuuk
  • 2cl cumin infused agave syrup
  • 1 egg white or aquafaba
  • 3cl verjus
  • Ice
  • Oxalis for garnish


  • Add all ingredients into a shaker.
  • Dry shake until the egg white emulsifies.
  • Add ice.
  • Hard shake.
  • Strain into a coupe.
  • Garnish with oxalis.
  • Enjoy.

  • 0,5cl The Plum, I Suppose
  • 1,5cl Cognac
  • 2cl Pineau des Charentes
  • 1cl Neisson rhum
  • 1,5cl citric acid
  • 2cl lavender and jasmin cordial
  • 3 dashes Fernet Branca
  • Float Peychaud's bitters


  • Add all ingredients (except Peychaud's bitters) into a mixing glass.
  • Add ice and stir until sufficiently chilled and diluted.
  • Strain into a fresh glass, over a nice ice cube.
  • Add Peychaud's bitters float.
  • Garnish with your favorite flower.
